Structure of the tilting retort
The tilting cooking pot is mainly composed of a pot body, tilting mechanism, heating tube, steam valve, etc.
1. Pot body:
The pot body is made of stainless steel or carbon steel plates, and the inner and outer walls are polished. The lid is equipped with a pneumatic discharge device, which allows the steam to be quickly discharged by simply pushing the lid open during operation.
2. Tilting Mechanism:
The tilting mechanism is generally composed of a tilting motor, sprocket and chain, which can tilt the pan body to make the product flow evenly.
3. Heating Tube:
The heat pipe is located at the bottom of the tilting retort and heats up the steam quickly, quickly converting moisture into steam so that the ingredients can be cooked and sterilized quickly.
4. Steam Valve:
Steam valves can control the inflow and outflow of steam to ensure full use of steam.
How the tilting cooker works
The tilting cooker heats the water at the bottom of the pot through a heating tube, forming water vapor, and the steam rises naturally, filling the entire pot with steam. During the heating process, the temperature and pressure can be adjusted by adjusting the opening of the steam valve to achieve different processing effects. In the process of food processing, the pot body is tilted through the tilting mechanism to fully heat the product, so as to achieve the purpose of rapid cooking and sterilization.

The working principle of the autoclave is mainly to take advantage of the fact that the boiling point of water is affected by air pressure. When the water vapor generated by the heat evaporation of the water in the pressure cooker is enclosed in the pot, the air pressure in the pot will rise, and the boiling point of the water will also increase accordingly. Therefore, inside the pressure cooker, water can boil at temperatures above 100, creating a high-temperature and high-pressure environment, thereby accelerating the cooking process of food.
